FIU 2006 Tailgate Party


Since FIU is in Miami, we decided to go with a Cuban theme for the tailgate party. The menu consisted of a 90 pound pig marinated in mojo criollo and cooked in a "caja china", rice w/ black beans, yuca, tequila marinated shrimp, various dips, two types of flan, mojitos, and a fully stocked bar (as usual).

Jeff (Mongo) and Teddy were in charge of procuring the pig for the event. They drove to the eastern shore of Maryland to find the perfect pig. Once they returned home, they shaved, washed, and cleaned him. They then rubbed his skin with salt and then added the mojo criollo marinade that Mongo prepared. The pig was then kept on ice while he slept in a large plastic container. The guys decided to name our pig "Chuck Amato".

Noli, Jackie, Dad, Richard, and Mongo arrived in Lot 1d at 8:00AM Saturday morning to get things ready for the festivities. Soon after, we were joined by Paul, Teddy and then the rest of the gang...

Tailgating/Miscellaneous Information

• WEAR RED!!!! Preferably University of Maryland shirts, hats, underwear, etc…

• Game starts at 6:00

• There will be a pre-game ceremony conducted by the Naval Academy that includes a flyover. Tailgate clean-up will begin around 4:45 to allow plenty of time to walk to the stadium, find our seats, and catch the pre-game festivities.

• Noli and his group plan on driving into the parking lot at approximately 10:00AM – so everything will be set-up by 11:00AM. So all are welcome to join the party anytime after 11:00.

• WEAR RED!!!

• Tip for those new to tailgating: If your schedule permits, plan on arriving early – especially if it’s a nice day – there will be plenty of food, drinks, games, and good people to chat with! Give yourself at least a couple of hours – we promise you’ll have a good time – even if you’re rooting for Navy (well…maybe not)!

• Directions to the tailgate parking lot (Click on maps below and look for RED STAR): Take I-95 into Baltimore and take the Russell St exit. Pass M&T Bank Stadium (Ravens) and Camden Yards (Orioles) on the right. As soon as you pass Camden Yards the parking lot will be on your right. The parking lot is bordered by Pratt, Eutaw, Camden and Paca streets, literally a football’s toss across Camden Street from Oriole Park. Look for flag poles waving the MD State Flag – ask for Noli or simply look for my black Ford Expedition.

• If the parking lot is FULL – there are plenty of parking garages in the office buildings nearby.

• WEAR RED!!!

• Feel free to bring any food dishes (dips, chips, salads, desserts, etc…) or coolers (preferably filled w/ adult beverages) to share with everyone. Contact Ira or Noli if you plan on bringing something. We’ll have a grill (or two) going and Ira has graciously volunteered to supply burgers and hotdogs for everyone (approx 25 people).

• If you have folding chairs - please bring them if you want to sit down – you can store them and anything else in my vehicle during the game if needed.

• WEAR RED!!!
