FIU 2006 Tailgate Party
Since FIU is in Miami, we decided to go with a Cuban theme for the tailgate party. The menu consisted of a 90 pound pig marinated in mojo criollo and cooked in a "caja china", rice w/ black beans, yuca, tequila marinated shrimp, various dips, two types of flan, mojitos, and a fully stocked bar (as usual).
Jeff (Mongo) and Teddy were in charge of procuring the pig for the event. They drove to the eastern shore of Maryland to find the perfect pig. Once they returned home, they shaved, washed, and cleaned him. They then rubbed his skin with salt and then added the mojo criollo marinade that Mongo prepared. The pig was then kept on ice while he slept in a large plastic container. The guys decided to name our pig "Chuck Amato".
Noli, Jackie, Dad, Richard, and Mongo arrived in Lot 1d at 8:00AM Saturday morning to get things ready for the festivities. Soon after, we were joined by Paul, Teddy and then the rest of the gang...
